Special Instructions

1.
A day before brewing, make a liquid yeast starter.
2.
Add 3 gallons water to brew kettle, add First Wort hops and grains, start timer, and heat to 170 deg.
3.
At 20 minutes or 170 deg, whichever comes first, remove steeping grains.
4.
Bring to boil, remove heat and stir-in and fully dissolve LME.
5.
Bring to boil; start :60 timer & follow hops schedule.
6.
At :15, remove heat and stir-in and fully dissolve DME. Turn heat back on.
7.
At :15 carefully place the cleaned and drained immersion chiller into the brew pot to sterilize.
8.
At :15 add the Irish Moss.
9.
At flame-out, add cold water to bring wort volume to batch size.
10.
Chill wort to 70 deg and rack to primary.
11.
Mix wort with sanitized spoon. Take and record OG.
12.
Pitch yeast / starter; primary at 68-72 deg until fermentation is complete.
13.
When fermantation is complete, rack to secondary and add dry hops. Dry hop for 10 days.
14.
For bottle carbonation: Add 130 g corn sugar to 500 ml water and boil for 5 min. Chill to room temp.
15.
Bottle and condition at 68-72 deg for 2-3 weeks until carbonated. Once carbonated, store at 58-62.
