Comments
1) Yeast is very picky! Add nutrients and propigate to triple prior to pitching.
2) Recipe requires two stages! Carboy and brew bucket are needed to start. Prepare 1st. stage; 3.0 gallon batch at 1.05 to 1.06 OG; rapidly cool, place in carboy and pitch propigated yeast. Prepare second stage (3.5 Gallon) with remainng ingredients, O.G 1.19 or higher; cool rapidly and place in Brew Bucket (DO NOT PITCH YEAST IN BREW BUCKET)! This will be your adder for the six days (next week).
3) Allow yeast to get very busy (couple of days or just prior to slowing down) begin 2 quart Wert additions daily from Brew Bucket (total of 3.5 gallons added) or until Carboy is brought up to desired level.
4) Allow to season for 4 to 6 months.
