Yeast starter: 6 tsp of DME in 400 ml water for 1 day in 80F water bath

water for mash 8.5 qts, for sparge 3 qts, for boil 4.5 qts (all filtered city water)

strike temp 180F (too high)

pitching at 69F; mix 3.5 gals of 104F wort with 3.5 gals of 46F water

Fermentation in glass (primary) and plastic (secondary)
7.
ferment 1 day @ 67F then at 53F in Primary (11 days), Secondary (52F for 15 days)
8.
primed with 2/3 cups DME in 3 cups water
9.
68 x12oz (355ml) bottles (6.378 gals), marked "JLX"; bottled on 2/3/2023
