Special Instructions

1.
add 1/4 campden tablet to 6 gallons of water
2.
separate 2 gallons, add sugar and bring to boil for 10 minutes
3.
Add remaining water and bring temp to 165F
4.
turn off heat, add corn, let rest as it chills, stirring every 5 minutes
5.
chill to 150, add malted barley
6.
allow to chill to 75 F for about 1.5 hours
7.
add amylase enzyme during chill to liquify if too thick
8.
strain, aerate,
9.
place in fermentation bucket, add yeast, cap with airlock to ferment for 7-10 days until fermentation complete
