Special Instructions
1.Aug 11/22: Mashed in with 13.5L, 3.5ml lactic acid and 2.5g each CaCl2 and CaSO4
2.Hit 65C, 50 minute mash.
3.Sparged with 20.5L, 4.5ml lactic acid and 3g each CaCl2 and CaSO4
4.4oz goji berries to boil split between muslin bags, into boil at 10 minutes left.
5.6oz goji berries (soaked in 2oz Noroi liqueur and 1oz gin) plus 4oz raw berries for fermentor.
6.55C mashbed with 80C sparge water for 70C mashout, 20 minute timer.
7.Added 1oz lightly toasted IABF cubes rinsed then soaked in ~1oz Pink Gin.
8.Aug 11/22 130pm: Pitch yeast into 29.5C wort. Into FC set at 29C.
9.Aug 12/22 9am: Laser at 29C. Added remaining gojis (step #5) as well as honey.
10.Aug 12/22 930pm: FC up to 30C
11.Aug 16/22 2pm: Began crash cooling.
12.Aug 23/22: Bottling day. FG at 1.013, beer is tasting sweet. Possibly the honey didn't ferment entirely.
13.Added 7.94oz dextrose to 19.25L at 30C for 3.54 volumes.
