Special Instructions

1.
Water chemistry: Add 2 tsp of gypsum in 8 gallons total water.
2.
Water chemistry: Add 1 tsp calcium chloride in 8 gallons water.
3.
Water chemistry: Add a pinch of magnesium.
4.
Water chemistry: Add a pinch of kosher salt.
5.
Adjust pre-grain water to a pH of 5.9. Check mash pH (5.2 - 5.4).
6.
For 12 lbs of grain at 70 F ... use 6.6 gal strike water at 155 F for target mash temp of 150 F.
7.
Reverse step mash: 150 F -> 142 F -> 156 F -> 170 F
8.
Sparge grains to a pre-boil volume of 7.0 gallons
9.
30 minute boil with hop additions as above. 220 V mode on the Anvil.
10.
Cool the wort down to 60 F and aerate for an hour.
11.
Pitch a 1 litre starter of Safale US-05
12.
OG = 1.056 with 23 litres into fermentor
13.
BrewHouse Efficiency = 77.03%
14.
FG = 1.012
