Special Instructions
1.Feb 05/22: Mashed in with 16L, 3ml lactic acid and 2.5g each CaCl2 and CaSO4
2.Hit 66c, 45 minute mash.
3.Sparged with 20L, 3ml lactic acid and 3g each CaCl2 and CaSO4
4.83c water plus 57c grainbed for 74c sparge. 20 minutes.
5.Added a drop of old Fermcap S to the boil and did not skim.
6.Added brown sugar at 8 minutes.
7.Feb 05/22 1pm: Pitched at 21.8c, into FC set to 21c. Added 1oz Disarrono and 1oz french medium oak cubes (soaked in 95c water for 5 minutes) at pitch.
8.Feb 07/22 430pm: Krausen dropping, FC up to 24c.
9.Feb 08/22 630am: Added 2oz of Willamette dry hops. No krausen, LB at 23.6c.
10.Feb 09/22 7am: No visible activity, FC up to 25c to finish.
11.Feb 12/22 8am: Stopped heating to begin cooling.
12.Mar 06/22: Bottling day! Added 3.75 oz to 19.6L with 1 vial Brett B. for ??? volumes. 1.010 SG at bottling
13.June 18/22: Tried a bottle after roughly 3.5 months. Finally starting to take on some Brett character but needs more time.
14.Aug 25/22: Tried a bottle, not much different than June 18.
