Adaptation of my popular Kick Axe Ale. Intended as a low cost, easy to brew basic ale that will appeal to a variety of consumers. And ALWAYS use some of my homegrown hops! Substitute the bittering hops for any noble/herbal variety or similar on hand (e.g. spalt, saaz, Hallertau, Tettnang) aiming for around 20-25 IBUs. The key is to use a touch of rye and acidulated malts with a base of 2 row (or pilsner) in order to add some spicy character which will balance the mild flavors and slight fruitiness from the minimal late homegrown C-hop addition. Use a high attenuating (e.g. US-05) or kolsh yeast and mash at a low temp to minimize sweetness in final product.
