Special Instructions
1.target 200-225ppm chloride and 100ppm sulfate (target 2:1 to 3:1 Chloride to Sulfate ratio)
2.whirlfloc tablet (15 min)
3.whirlpool hops in hopstand @180 degrees F
4.mash @154 for 60min with mash pH of 5.3 (adjust with lactic acid)
5.Day 1: pitch yeast @68 degrees F, allow to rise to 72 degrees. fermentation sholud be done in 5das.
6.Day 6-7: drop temp to 60 degrees, hold for 24hr
7.Day 7-8: Dry hop @ 7-10psi - hold 60 degrees
8.Crash to 35 degrees for 48hrs
9.Fill keg with CO2 via star-san keg pressure transfer method
