Special Instructions

1.
Infuse grains and mash water at the outset of heating, stirringly constantly until sacc rest temperature is reached
2.
Mash 4 gallons with 2.00g Gypsum, 2.00g CaCl
3.
Sparge 1 gallon with 0.50g Gypsum, 0.50g CaCl
4.
Add whirlfloc, yeast nutrient, and candi sugar with 15 minutes left in boil
5.
Whirlpool coriander and black pepper along with flame out hops

Notes:

Pours a mahogany color with 1 finger of foam. Aroma is a slightly hoppy, yeast phenolic, somewhat sweet. Flavor starts off with something like oxidation, but it evolves quickly into a sweet sort of IPA in that it has a very strong stone fruit hop presence that is amped up in sweetness from the yeast phenolic, and then there is maybe a tinge of wood there. Mouth feel is medium and carbonation is medium to soft. Overall, this beer doesn't have an identity as a Belgian or an IPA, and the weird oxidation character really detracts from it. As is written, "I know your deeds, that you are neither cold nor hot. I wish you were either one or the other! So, because you are lukewarm—neither hot nor cold—I am about to spit you out of my mouth." 2 stars and I would simply abandon this recipe as I don't care to fix it.
