Slightly undershot initial mash temp Collected 4 gallons First runnings: 1.059 Cold sparge w/3 gallons (mash temp ~100F) let sit for 10 minutes Sparge runnings at 1.034 Preboil: 7 Gallons @ 1.044 60 minute boil Added Super Moss and Yeast nutrient at 10 minutes to go Added 1oz Galaxy w/5 minutes to go Added 1oz Galaxy into kettle when chilled to 180F ~6 Gallons @ 1.052 into fermenter Aerated with Stirrer and pitched 2 Jars of harvested WLP007 (1st generation) @ 10pm --- 3/27/17 --- Nice fermentation going @ 48 hrs post pitch Added .5 oz galaxy (going to split biotransformation dry hop in two) --- 3/28/17 --- Added .5 oz galaxy (going to split biotransformation dry hop in two) --- 3/29/17 --- Added .5 oz galaxy (going to split biotransformation dry hop in two) --- 3/30/2017 --- Fermentation slowed; checked gravity w/refractometer at 6 Brix; corresponds to 1.006 using post-fermentation refractometer correction app on northern brewer (will verify with final hydrometer reading). Very orange aroma (and flavor) with some harshness in the finish. May just need a few more days. Might switch final dry hop to Falconers Flight to give some extra depth to the flavors. --- 4/1/2017 --- Racked to secondary to harvest yeast; added modified dry hop of .5oz Falconers Flight and 1oz EKG to fermenter; gravity w/hydrometer was 1.006; est. ABV around 5.6% --- 4/8/2017 --- Racked to keg w/1 dropper of Bio-Fine; Gravity 1.005; Force Carbed at 25 PSI (rocked keg on side for 5 minutes and then left overnight in fridge), dropped pressure on Sunday.

Notes:

Maltier and fruitier (some toffee malt character?) than the first batch of Pale. Orange-y aromas with deeper/earthier hop notes (from the Goldings?). Really easy drinker, probably more of an English style than the first batch.
