Starting grain temp 65F Strike Water - 2.75 Gallons at 160 (tap w/1/2 Campden tablet) Aimed for Sacc rest at 148 for 60 minutes; Mashout Infusion of 1.5 Gallons at Boiling 10-minute mashout rest at 168F Collected 2.5 Gallons of first runnings - 1.032 @ 137F, Corrected to 1.048 Batch Sparge w/3.5 Gallons at 168F (sit 10 minutes before sparging) Second runnings at 1.027 Collected 5.5 Gallons, Pre-boil Gravity of 1.022 @ 125F, Corrected to 1.034 60 Minute Boil, slight accidental addition of water from chiller into kettle Post Boil gravity 1.034 @ 80F, corrected to 1.036 Chilled and Pitched WLP001 fermentation showing at < 6 Hours Added 1# Pilsen DME 1/2# Candi Sugar boiled in ~1Qt Water to boost gravity @ ~ 18hrs; Lots of fluffy yeast colonies in suspension; 1-2 bubbles every second Very active fermentation @ 30 hours; 4-5 bubbles/second ---------------- 2/13/17 transferred to secondary; gravity 1.009; dry hopped w/.5oz Simcoe and .5oz Falconers Flight Sample tasted light, dry, citrusy ------------------ 2/19/17 transferred into keg; light body, clean, slightly bready malt, pleasant citrusy hop flavor and aroma, slightly grassy dry hopped aroma
