trying split brew process: mashing at night, sparging and boiling next day. Allow to rest overnight after mashing in at 151 (9:48 pm). Sparge 8-10 hours later, collect runnings and boil per recipe. Cool and pitch yeast starter when wort hits 65F. Started sparge at 830 am nearly 1 hour fly sparge time. Created yeast starter from new yeast pack two days before Pitched yeast starter at 3:30 pm when fully cooled to 65f. Started fermenting by 10 pm. Fermented at 62f for first couple days left in garage as temps averaged mid 60's in day/30's at night. Garage remained low 60's average temp during primary fermentation stage. Added 5.5 cups boiled sugar water (.25 lbs sugar) to raise fermenter volume to target 6.1 gallons and keep calculated target OG at 1.044. Waited until fermentation slowed and krausen dissipated (day 4). Even spent a day or two in mid to upper 50's after the first week, although average temps were running low 60's later during fermentation period. Yielded about 5.5 ABV final product in about 2.5 cases of bottles.

Notes:

Tasted while bottling. Crisp, fruity and spicy. I can't believe how much favor this has for being so dry and with relatively little hops.

Notes:

Racked to secondary. Took a taste. Very similar to a stellar type brew. Turning out great! Will wash the yeast and brew this again. No changes necessary.
