MASH - Stike temp = 75.3 - had to stir until 68.6 - centre: 67.8 edge: 68.4 - left oven on @ 90C - don't do that again - temp spikes Pre boil SG: 11.7Bx (1.046) - only included 25% of dark grains BOIL - cold steeped 75% (300g) dark grains in 1.2L water. Yeilded 750ml - sparged dark grains with some hot wort - added dark water 10 mins from the end - checked gravity and was a bit low so boiled an extra 15mins (was 1.057) OG: 15.9Bx FG: 10.2Bx (too high but probably because of mash temps too high - actually happy that it's finishing sweeter than planned)

Notes:

Tasting much better. Don't think there's any hint of Phenols (was from the glass carbouy). Needs a bit more carb. Bubbles still a bit big. Definitely moving in the right direction.

Notes:

Two weeks in the bottle so needs some time - Hint of something phenolic (wonder if it was new water) - Very bitter finish - Mouthfeel a bit thin for my liking Will have to wait and see how it improves
