Added the Amarillo and Simco hops after 4 days. Will dry hop for three days and rack it Saturday evening. June 14th- kegged a little early to be ready for Megan's party. Great hop flavor ending at only 1.008 FG which is exactly where it needed to end!

Notes:

So, this beer was supposed to be in the secondary another 4-7 days....I took it out sooner hoping it would be ready for Megan's surprise party (it didn't carbonate quick enough...) Regardless....this beer turned out amazing. I hit almost all calculations including the FG. Not sure which hops gave it this flavor....but this beer tastes SO similar to the Southern Tier Tangier. Very smooth and nice Session IPA at only 4.5%, I think the dry hopping really added flavor to the beer.
