1.032 gravity after mash @135 degree, about 1.75 gal. Had a bit of trouble with the mash temperature - first too high (because I struck at 170 - dope), then a bit too low. Having a real strainer made the sparge much faster than last time. After the 60 min boil, I wanted to cool to 180 with immersion coil, then add hops and sit for 30 BUT it cooled within 5 min to about 140, so stopped there, added 1 oz Citra and let sit for about 40 min, then cooled further to about 80 before transferring to fermenter bucket (the 3 gal bucket this time so I don't have to mess with setting up bubbler in a couple of days). Slightly less than 1.25 gal after boil, about 1 gal to fermenter. 1.066 OG. Pulled out hops from trub, put in bag and added to fermenter 20Jun - move to secondary, gravity 1.013, about 2cups short of full gallon to secondary - no hops aroma ;-( and taste isn't all that pleasant, pretty yeasty 27Jun - add 1oz Citra to secondary as dry hops - smell is less yeasty but does have that off aroma that I've been trying to avoid - metallic/plastic?? 3Jul - bottle, G=1.013, aroma is awesome, PLEASE, PLEASE I hope this aroma is what I have after carbonation ;-) - 4 22 oz, plus maybe another 8 oz, so a full 32 oz short of the gallon due to trub. the yeasty sediment though, tastes awesome. 20Jul - reflections. 1.066 / 1.013 yielded 3/4 of 6.9% ABV. I'd originally planned to dilute but didn't. If I had, and given I was about 1 qt short of full gallon from secondary, the ABV would have been 3/4 of 6.9% or 5.2%, so pretty close to design of 5.0%.

Notes:

still slightly congested but just couldn't wait to try the second full bottle. Not much aroma unfortunately, at least that I could grab onto. Perhaps a bit warm since the beer fridge at Packwood seemed not working well. Still more enjoyable than the Stone GoTo that followed, which suggests that either congestion or palate was troublesome to enjoying a good IPA today. What is definitely different here, though, is that there's almost none of that plasticky taste common to past trials. Only 2 bottles left now so let's get rid of the congestion before the next taste ;-)

Notes:

first tasted the small, half-filled 18oz bottle which contained more than a bit of the bottom gunk of the secondary fermenter. And unfortunately I was congested so aroma was difficult to discern, though SOME hops was definitely there, certainly more than any other of my brews so far. And the taste? Excellent, eerily reminiscent of current favorite Broken Window. Unfortunately there was only a few precious ounces of this silty brew. Second bottle lacked the aroma a depth of taste that the first had so wasn't quite as satisfying. Again, congested so hard to get aroma but taste was like many decent IPA's, if less bitter. Enjoyable, not great, but if without congestion there's real aroma I would be ecstatic. Very happy in any event.
