OG 1.063 FG 1.013 ABV ~6.56% Apparent Attenuation ~ 78% (which seems slightly high) Mashing with a bit under 2.5 gallons of water. It's almost entirely campden-treated tap water. Trying to mash a bit thick, since I've had better luck with that lately. Mashed in right around 151-152F. After ~25 minutes, the temperature had fallen a 2-3 degrees, so I gave it a boost of heat and brought it back up to 151F. Brought the temp up to ~155F after 50 minutes. Let sit there for 15 minutes. Brought temperature up to 160-161, will let sit there for an additional 10 minutes. Added a bit of Irish moss in the last 15 minutes of boiling. I've also been tossing periodic partial pellets in during the last 15 minutes. I'm just looking for a tiny hint of aroma. Cooled the wort down to ~68F and strained it into the bucket. Pitched as much of my starter as I could rouse. Placed the bucket in the basement where it's about 65F, on top of a cardboard box, just to keep it off the floor. 3/20/2021 5:11pm: It's been a bit over 24 hours since pitching. I've been a bit hesitant as gas hasn't been bubbling out the lock. I opened the lid, because sometimes this one fits a little weird, but there's definitely krausen on top of the beer. Hopefully my refitting of the lid will mean bubbling is soon to follow. The ambient temp is around 64-65 down there. I wrapped a blanket loosely over most of the bucket. 3/21/2021 10:04am: Bubbling started last night before I went to bed, but having just checked now it's going steadily about once a second. 3/23/2021 9:14am: Looked like airlock activity has slowed down, so I brought the carboy upstairs and put it in a closet that is around 69F. Hopefully that will help it finish up. Bottled just under 3 gallons of beer.
