Super smooth brew. Set temp controller to 68F. Pitched Omega's Fuller's strain. Challenger hops smelled a little wack, will probably roll with all EKG in the DH.
Took 48 hours to start rolling. Roused it plenty in the meantime. Moved temp up to 72F. A little disappointed by the long lag time, may or may not harvest.

1/17@1.010@75F--corrected to 1.011. Fucking finally. Has a touch of diacetyl. Will recheck in a couple days, and if clear, keg with dry hops.
1/28--tapped a few days ago. Golden hue with white foam that leaves generous lacing. Rather bright, but not the brightest beer I've ever brewed with this yeast. Marmalade aromas. Medium-light bodied, with notes of tangy citrus peel and honey. Clean bitterness, with a crisp, dry finish.
This beer came out much better than its fermentation timeline suggested. I wasn't sure if I was going to want to drink it! Upping the dry hop, and cutting the funky challenger was the right call. Totally delicious pint. It will surely be gone too soon.
