Added 2 tsp (approx 9g) gypsum to the brewing water.
Boiled with 1/3 of the Pilsener LME (appox 3.5 lbs), 0.5 lbs of the Wheat LME and the dextrose. Added the remaining Pilsener LME at the end of the boil / whirlpool.
Strained as much of the hop matter as was possible on the way into the fermenter. This caught a lot but as you can see from the hydrometer sample, plenty more made it in.
Pitched 2 packets of rehydrated US-05 at 65F.
