Mash was a disaster. Mash in at 159. Grains were 55. Shooting for 154. Thermometer went fn up to 164? Two thermometers didn't read the same. Who knows...Mash is a guess. Went onto boil. Close boil over. Gravity at 30 minutes was 1.033. Not too bad...FG was 1.043 @ 100 degrees. Brewers Friend calculator converts that to 1.047. Nailed it. Transferred to large glass carboy @ 90-100 degrees. Left in 55 degree garage overnight. Left starter out to acclimate as well. Pitched 2/3 of starter into wort. Other 1/3 back into mason jar (3rd generation) Starter was done on Monday. Fridge all week until brew day - Friday. Pitched on Saturday 1/9/2015. Left in 55 degree garage overnight. Left starter out to acclimate as well. Pitched 2/3 of starter into wort. Other 1/3 back into mason jar (3rd generation) solid temps in pantry 64F. Up to 66F. Moved out of pantry after 1 week. Temps stayed around 68F for 2nd week. Dry hopped 1/23/2015 1/28/2015 Gravity 1.017 still a tad high. Mash temp problems? Sample tastes great, slightly bitter from the recent dry hop. Ready for primary gelatin/cold crash and keg. added 1/2 tsp gelatin to 1/2 cup water. Short bursts of 7 seconds in microwave until temp reached 150 degrees. Added to 59 degree beer. Then stuck carboy into fridge to cold crash. Racked to 3gal keg. Added voile to racking can to filter gunk before it reached the keg. Slow...but it worked! Had 1.5 to 2 gallons extra. Bottled (almost 9 Grolsch bottles) with 1/2-3/4 tsp table sugar in each bottle to prime. Set keg at 30psi. Good carb in 24 hours.

Notes:

Clear. Not hoppy. More dry hops or longer? Tad harsh bitter. might need to try different amount of 60 and 30 minute hop additions. Age might help? But still a tasty brew. has a thickness to it. Good. Will get another 5 gal batch ready for the carboy.
