(Include any important notes from brew day until tasting)
1.080 1st runnings 3 gallons collected; 1.035 2nd 4.5 g; 3rd 1.020 ; fly sparged with remaining. 7 gals total collected. threw in val's hops (the first collected only about 1/4 oz at 5 mins with my early cascade...and centennial per recipe). didn't get full conversion per iodine test. lower than expected OG, so I added .5 lbs table sugar (in 400 ML boiled water).
Centennial hops were dried and stored in fridge (picked early in July). started turning brown (seemed to be picking up moisture from fridge, so i wanted to use them without vacuum sealing). had just over .5 oz in baggie.
Finished just before midnight Saturday. used jar of kolsch yeast from last batch. wasn't working sunday afternoon yet.
Ended very dry (nearly 1.002). about 5.25?V
