Special Instructions

1.
Bring 2.91 gallons of water to 160
2.
Mash in and hold at 149 for 90 minutes
3.
Bring 6.57 gallons of water to 180 for sparge
4.
Collect 7.5 gallons for boil
5.
Boil for 90 minutes
6.
At the last 60 minutes add 1oz Saaz
7.
At the last 15 minutes add whirfloc tablet
8.
At last 10 minutes add hallertauer, yeast nutrient, supermoss, and toasted caraway seed
9.
Chill, Aerate, Pitch yeast
10.
Ferment 14 Days at 50 degrees
11.
Secondary Ferment/Lager for 2 months
12.
Bring out of refrigeration and let the beer come to room temp for 36 to 48 hours
13.
Chill back down to 50 degrees and keg
14.
Bring carbonation to 2.5 to 3 volumes
