Brewed 9/13/20 Pale, Oats, Carapils, and Flaked Wheat Mashed around 157-159. Added 6ml LA, 16g CaCl, and 4g Epsom, and pH was about 5.35 so added 3ml LA to the boil. Pulled off a bit too much, extended boil to 75 mins, but yield was still a bit high and gravity a bit low - got 1056-57 but was shooting for 1060-62. Not a big deal - will keep the ABV below 6%. Hopping schedule Bravo bittering to 10 IBUs Idaho 7 late boil (1oz @ 5 mins) and flameout (1oz) for 5 IBUs Vic Secret & Nelson hop stand (1oz each @ 200* and 175* for 15-20 min each) Pitched 1.3L starter of Lallemand New England American East Coast Ale at around 76*. Dropped temp down to 64* overnight (with limited activity) and then bumped it back up to 67* the next morning to get the fermentation going. Never seemed to fully take off - at 48 hours it looked dead but was down to 1026 or so. Threw in the bio hop and shook it up, left it out to warm up to ambient. 2oz Nelson & 1oz Vic bio-hop (at 24 hours) 2oz Nelson & 1oz Vic at dry hop (1-3 days after 5-7 days of ferment) Gravity stayed really high - finished around 1.020 or 5%. Sloppy transfer left a big-time hop burn for weeks (actually months). Great aroma, but the flavor didn't pop. Thin even though it's pretty sweet. Need to get the gravity up and maybe some more malt character for heft - add some Biscuit perhaps.
