Special Instructions

1.
Omega Yeast 605 Lacto starter - at least 1L in 1.040 at 100F for 3 days ahead of brew day.
2.
After mash, heat to 170F in kettle for 15min and cool to 130F
3.
Dispense hot wort to CO2 filled keg (with sanitized tube) and blanket with more CO2.
4.
Pitch lacto starter when temp falls to 110F and hold for 2-3 days around 100F (sample for sourness).
5.
Once adequately soured, boil for 30min.
6.
Cool to 65F and pitch sacc starter.
7.
Hold at 70F until FG consistent achieved.
