Special Instructions

1.
BIAB: 6.5 gallons of distilled water
2.
Strike water temp 164*, mash for 75 minutes for longer contact due to high mash thickness
3.
Add 7 grams CaCl, add 3 grams CaSO4 and 2.75 mL of lactic acid to mash
4.
Water profile: pH of mash: 5.34, Ca: 105; Cl: 137, SO4: 68
5.
Before wort comes to a boil add 11 drops of FermCap
6.
At 15 mins left in boil, add .3 tsp yeast nutrient and wort chiller
7.
Mosaic goes in @ 175* and are WP'd for one hour
8.
Cool to close to 100*, transfer to carboy and let cool in swamp cooler
9.
Ferment around 66*-68* for four to five days
10.
Start ramping temp after that, closer to 71* for four to five days
11.
Add first round of dry hops (2 oz Galaxy) on day 5-7
12.
Cold crash on day 10 and crash for 2 days
13.
Keg beer and add last round of dry hops, 1 oz Mosaic and Columbus in keg
14.
IBU's are closer to 48, assume the big WP adds bitterness as a 5 min addition
