Add 3.2 ml lactic acid,.5 g Calcium Chloride and .8 g Chalk to 2.7 gal of mash water. Mash temp 148. At 10 min pull out 1 gal of the thickest part of the mash (grains and water), heat on low to med and bring to a boil. Add .75 oz whole leaf hops, simmer and stir for 15 min. Add back to mash tun and rest 30 min. Vorlauf and sparge using 5.2 gal of water with 1 g of Calcium Chloride added heated to 168. Bring wort to a boil for 5 min. Chill to 75 and pitch yeast. Ferment for 3 weeks, then add peach puree and wait 1 week. Add 4 oz of peach extract at kegging.
