Special Instructions

1.
Oct 18/20: Mashed w/ 20.2L, 2.5ml phosphoric, 3g CaSO4, 2.5g CaCl2
2.
Hit 67c mash temperature.
3.
Sparged w/ 17.5L, 2.5ml phosphoric, 3.3g CaSO4, 2.8g CaCl2
4.
Hit 70c mashout with 60c bed 80c water.
5.
Added 1ml of phosphoric with 5 minutes left in the boil to help with DH pH rise.
6.
Oct 18/20 1pm: 27c wort into FC set to 26c
7.
Oct 19/20 7am: Laser reading 26.8c. Vigorous fermentation already.
8.
Oct 19/20 8pm: Laser reading 27.2c.
9.
Oct 20/20 7am: Added 1oz Mosaic LN2 to FV at 26c. Still vigorous but krausen has calmed down.
10.
Oct 21/20 7am: Added 1oz Citra LN2 to FV at 26.3c. Krausen is down more.
11.
Oct 22/20 10pm: FC up to 27c
12.
Oct 26/20 7am: FC up to 28c to finish.
13.
Oct 29/20 7am: Started to cold crash at 21c.
14.
Nov 07/20: Bottling Day! 5.5oz dextrose to 18.5L at 28c for 2.75vol.
