Brewed 8/30/20
Andechs Helles yeast from Rob (Imperial Pilgrimage): 100ml of slurry that should have 200 billion cells. 1.6L starter with 6oz of DME should step it up to the 40-425b cell range. Starter on Friday night, brewed on Sunday evening.
Mash pH was stubbornly high around 5.45, so I added more LA to the boil, and it dropped all the way down to 4.82. Something to keep an eye on.
Chilled overnight to 48*, pitched Monday morning, and it took off quickly. Started around 50* then ramped up to 53-54* after 24 hours.
Forgot to check the gravity. Yield was probably closer to 8gal, so it may have been on the low side. Whatever.
I believe this was really, really good.
