Mash Steps

Special Instructions

1.
Mash 1 hour 10 mins. Grain in @ 65C for 1 hour then to 68C for 10 mins
2.
Then to 70C for10 mins. Then to 77C for sparging
3.
Hops as above. Frozen Blackberries, vanilla paste and cloves boiled with last hops for 15 mins.
4.
Protofloc added for last 10 mins plus cherry flavour
5.
Yeast added at 20C SG1.060
6.
12 hrs later fermentation going OK
7.
1.25k of home frozen blackberries brought to boil in 1li of water with 10 Herm tabs
8.
Boiled for 2 mins then strained and temp dropped quickly to 20C in freezer.
9.
Blackberry puree/juice added to secondary at 20C
10.
Juice added to secondary fermentation on 19th August
11.
2 days later still fermenting well. SG1.020
12.
Racked on 24th August, 8 days after brewing. SG1.018
13.
Placed in cool cellar on 25th August. Very slow fermentation continues for another week.
14.
Cold crashed on Sunday 6th September for 6 days
15.
Bottled on 12th Sept. bulk primed with 66gms Dex plus 12 Herm. tabs. SG.1.016
