Brewed 8/4/20 using (very) fresh malt from Dark Cloud.
Wanted to keep the mash temp low to dry it out, esp since AA on 013 is only 68-75%. Mashed at 148*. Really struggled to keep the pH down. Added minerals to the mash, pH around 5.6. Added 2ml LA to sparge, still around 5.6. Added 2ml more to the boil and it stayed around 5.6. Boiled 3ml more LA and added to the fermenter - hopefully it gets it down to 5.3ish. Calculator said 5.25.
Hopped with 1/2 oz of Exp 07270 at 75 mins, because I had no other British hops. Only used bittering hops to let the fresh malt shine.
Pitched a 1L starter of WLP013 (London Ale). It was a bit old (BB 6/28) and smelled weird upon opening (vinegar), but it took off after 12 hours or so and was very active at pitch after a mid-brew feeding. Pitched around 78* and let it cool over night. Temp was down to ~68* in the morning, and there was a small amount of activity.
OG 1037-38, target FG will be 1.008-10 yielding 3.5-3.9%.
