Special Instructions

1.
Pre-acidify to pH 4.5 and pitch lactobacillus @ 100F until pH drops to 3.5.
2.
Bring to a boil. Add Sea Salt, Yeast Nutrient, & Whirlfloc @ 15 min remaining in the boil.
3.
Chill to 100F and then pitch yeast. Ferment @ 85F for 7 days under 15 psi.
4.
Cold crash to 33F for 4 days. Transfer to serving keg on top of gelatin & 400 ml Tequila Lime Tincture (4 lime zests for 2 weeks).
