Special Instructions

Water: 100% RO water, between 125-150 chloride and between 60-100 sulfate. 3 liter per gal bottling volume

Mash: single infusion mash - mash in between 67C and 76C - PH between 5.30 and 5.35. 1.1kg grain per gal bottling volume. 3 liter per gal bottling volume

Sparge: 2 step sparge with 75C water. 3 liter per gal bottling volume
4.
Boil: add first Citra hop just before flame out, second after flame out, whirlpool (third) below 80C for 20-30 mins
5.
Fermentation profile (keg): 12 day ferment in primary (add dry hop after 2-5 days) 2 day ferment in keg (dry hopped keg)
6.
Fermentation profile (bottle, untested): 14 day ferment in primary (add dry hop 1 after 2-5 days and dry hop 2 after 10 days)
7.
Keg/bottling temperature: 7C
8.
Carbonation preferably in Keg (2.3 CO2 at 12.5 PSI)
