Heat up about 4 gallons of water for the mash up 149F for 90 min then bring temp to 175 for 10 min. Fermentation is for 2 weeks at temp 53F. Then rack in to a secondary carboy for 2 weeks at 55F then raise temp for 2 more weeks at 57F.
