Special Instructions

1.
Steep specialty grains at 165F for 30 minutes, then remove from kettle.
2.
Bring wort to a boil, remove from heat and add malt extract.
3.
Return kettle to heat, bring to a boil and add 1oz East Kent Goldings. Boil for 60 minutes.
4.
With 15 minutes remaining in boil, add 1oz East Kent Goldings.
5.
Chill wort to 75F and transfer to primary fermenter.
6.
Ferment at 68F for 7-10 days, until active fermentation ends.
7.
Transfer to secondary fermenter and ferment for 7-14 days.
