Special Instructions

1.
Brought 4.9 quarts of water up to 161 degrees, added grains for 60 min mash
2.
Sparged grains with 3 gallons of 170 degree water, added DME, and brought up to boil
3.
Followed hop schedule and added Irish moss at 15 min
4.
After flameout, placed kettle into ice bath and cooled to 80 degrees before topping up with 1.75 gallons of cold water
5.
Added Imperial Dieter G03 German Ale yeast and shook fermentor vigorously before placing in kegerator for 12 days at 60 degrees
6.
After 7 days, brought temperature up to 67 degrees gradually over four days before crashing to 35 degrees for 5 days
7.
Added chamomile and kaffir to 2.5 cups of boiling water and steeped for an hour, then strained, rinsed with a half cup of boiling water, and added tea to keg and transferring to keg and carbonating
