Smooth brew day, solid mash temps, and a nice very light-yellow beer, I added the zest of 5 limes and the last charge of hops at 5 minutes left in the boil, I made about 2 quarts of limeade with a touch of honey with the limes and zested 3 more limes and put in vodka to make a lime zest extract. I'll add the limeade on day 3 or so of fermentation and the extract at bottling time. Bottled on 09/23 for Brewtoberfest Oct 8th. Ended up with 59 bottles of appropriately hazy wheat beer. Mash temps came in a bit high, but were stable 150.8 at the start and 150.6 at the end, was shooting for 149 but I overshot. Ended up with right at 6 gallons of 1.054 wort in the fermenter, looks great, light straw color, has a nice lime flavor and I pic up the sorachi ace hops that I used late for flavor and aroma. I'll kick off fermentation at around 64 and the bring up to 68 over the course of a few days. I'll add the limeade around day 3 of fermentation. Bottled this today, hoping it'll ...
