Originally calculated with Pils extract so had to add 2# (from 14 to 16#) during the sparge. Shooting for 5.1-5.2 mash pH but reading across mash and both sparges were around 5.75 after 8ml of LA. Added 8 more ml to the second sparge to get down the pH and then 8ml more in the boil (4ml for each kettle). Split boil. 2oz Mandarina Bavaria total at bittering (60 min). 2oz Tett (1oz in each kettle) at 20m and 5m for a total of 4oz across both kettles. Added 16mg more LA across both kettles to get down below 5.1 pH during the boil. Got it down to 4.98 halfway through the boil Split the 12gal batch between two 6.5 gal carboys. Half with Imperial Harvest Lager (Augustiner) slurry, half with Safale-23 lager yeast (two dry satchels). Pitched around 60* with 20 sec of pure O2 and then chilled down to 48-50*. Dropped it down to 48-50* over night. Started out fermentation at 51-53* for first few days, then 53-55* for days 5-10 ,55-57* for days 10-17. Up to 60-62* for days 17-21 (d-rest). Keg with 4oz of table sugar to naturally carb sitting at ambient for 3-5 days. Back in fridge to drop down to lagering temps over two weeks.
