Mash Steps

Special Instructions

1.
Heat 8 gal of diluted (20%) strike water to 164 degrees in big kettle
2.
Add 3 grams Gypsum, 4 grams CaCl, and 3 grams of Epsom
3.
Assume grain temperature is 75 degrees
4.
Add 4 gal of strike water to tun while stirring in grain
5.
Mash target temperature is 152 degrees
6.
Let stand for 60 minutes
7.
Slowly recycle tun water until clear
8.
Heat remaining big kettle water to 170 degrees (sparge water)
9.
Begin to slowly drain wort into small boil kettle
10.
Very slowly pour kettle water atop grain bed (LIMIT amount of water on grain bed)
11.
Collect 6.5 gal of wort into small boil kettle
12.
Proceed to hop schedule
13.
Boil wort for 5 minutes then add 0.5 oz of Fuggle
14.
Boil for 25 minutes then add .05 oz of Fuggle
15.
Boil for 20 minutes then add 1 tsp of Irish Moss and CHILLER to boil
16.
Boil for another 5 minutes then flameout
17.
Let wort cool to 180 degrees then add 1 oz of Fuggle
18.
Cool wort to 75 degrees
19.
Take hydrometer reading
20.
Transfer wort to primary fermenter
21.
Stir vigorously to add oxygen
22.
Pitch vial of Clarity Ferm
23.
Pitch WLP 001
24.
Seal and store fermenter at 67 degrees
