Special Instructions

1.
BIAB mash MO, oats, and midnight wheat at 153F for 60m
2.
Steep chocolate malt, C80L, and roasted barley in 160F water for 30m
3.
Dunk sparge the mash grains and combine with steeped grain water
4.
Boil 4 gallons for 60m, adding half LME at beginning and half at end of boil
5.
Add lactose and Whirlfloc with 15 minutes left
6.
Chill and transfer to carboy, topping up with cold water to 5 gallons
7.
Pitch rehydrated yeast and ferment at 67F, letting temperature rise after a few days
8.
Carbonate to 2.1 vols with dextrose
