Special Instructions

1.
After mash, cool to 51C.
2.
Throw in the acidulated malt since it has lacto on the outside.
3.
Keep sweet wort at 35-50C over the next 2-4 days, tasting along the way to check for sourness. It's going to smell, don't worry! After it is sour enough for your liking
4.
Bring sweet wort to a boil and run hop schedule.
5.
Pitch yeast when cool, rack onto cherry guava (araca) when primary is finished.
