Strike Water: 100% filtered NYC tap water.
3.
Sparge water: 100% RO.
4.
Strike water additions: 1.5g gypsum; 4.5g calcium chloride.
5.
Sparge water additions: 1.5g gypsum; 4.5g calcium chloride.

Mash in 152F.
8.
Target mash pH: 5.4
9.
PBG: 1.043
10.
Pre-acidify wort to 4.4 with (12ml) lactic acid.
11.
Target OG: 1.057
12.
OG: 1.055 (lower because of quince stock).
13.
Cool wort to 100F and transfer to primary fermenter.
14.
Pitch Omega Lactobacillus blend after wort falls below 100F.
15.
Sour wort at 85F for 48 hours.
16.
Wort allowed to cool to ambient temps.
17.
Pitch London Ale III.
18.

19.
Ferment at ambient temps. No control.
20.
Day 4: 2nd round of bioconversion dryhopping.
21.
After 2 days, the brew jacket temp went up to 67F on its own.
22.
Add Simcoe powder two days before packaging.
