Strike Water: 100% filtered NYC tap water.

Sparge water: 100% RO.
4.
Strike water additions: 1.5g gypsum; 4.5g calcium chloride.

Sparge water additions: 1.5g gypsum; 4.5g calcium chloride.

Mash in 153F.
8.
Target mash pH: 5.47
9.
PBG: 1.043
10.
Add milk sugar with 10 minutes remaining in the boil.
11.
Pre-acidify wort to 4.4 with (12ml) lactic acid.
12.
Target OG: 1.065
13.
OG: 1.062 (lower because the honey hasn't been added yet).
14.
Cool wort to 100F and transfer to primary fermenter.
15.
Pitch L. planterum after wort falls below 100F.
16.
Sour wort at 85F for 48 hours.
17.
Pasteurize sour wort at 170F.
18.
Add honey.
19.
Hop and botanical stand:
20.
- 42 grams of lemon oil.
21.
- 0.125 oz of fennel pollen.
22.
Cool to sour wort 65F.
23.
Pitch London Ale III.
24.

Ferment at 60F.
26.
Day 4: 2nd round of bioconversion dryhopping.
27.
After 2 days, the brew jacket temp went up to 67F on its own.
28.
Add Simcoe powder two days before packaging.

Notes:

At pasteurization, my gut is saying more lactose and calcium chloride and the same or less lemon oil.
