Mash Steps

Special Instructions

1.
Heat 8 gallons of diluted water to 162 degrees
2.
Add 3 grams each of gypsum and CaCl; 1 gram Epsom
3.
Use 5 gallon for striking and 3 gallons for sparging
4.
Mashing: assume 1.75 qtz/# of grain (5 gallons)
5.
Add 3 gallons to tun then stir in grains
6.
Mix thoroughly: mash temp should be 152 degrees
7.
Seal tun and let stand for 60 minutes
8.
Heat remaining water (3 gal) to 170 degrees
9.
Slowly drain liquid from tun and pour back on top of grain bed
10.
Continue until liquid being collected is clear
11.
Slowly drain wort while adding sparge water
12.
Collect 6.5 gal of wort and proceed to hop schedule
13.
Boil wort for 5 minutes then add 0.5 ounce Sterling hop (A)
14.
Boil for 25 minutes then add 1 ounce Spalt hop (B)
15.
Add 1 teaspoon of Irish Moss
16.
Boil for 10 minutes then put chiller into boil
17.
Boil for 5 minutes then turn off heat
18.
Cool wort to 75 degrees within 30 minutes
19.
Take hydrometer reading (OG)
20.
Pour wort into fermenter and top off at 5 gal mark
21.
Pitch vial of Clarity Firm
22.
Pitch dry yeast Safale 05
23.
Seal fermenter and store at 67 degrees
