1.Kettle caramelization @ 45 minutes of mash remove 1.25 gallons of wort from mash ton and boil down to half volume, then add 1.875 gallons from Sparge water to mash ton to replace the water the .625 gallons of boil off
2.Total water needed 10.625 gallons
3.Mash in water 3.74 gallons @ 170f (14,000 ml) (168 2 because of cold mash ton)
Only hit 3.5% abv. 1.040 OG, 1.014 FG. Not as much caramel flavor as I would have liked, next time I will go much further on caramelization. Not a bad beer though, great for 3.5% abv. It won't be difficult to drink, and its definitely on the right track.
