Special Instructions

1.
Dough in with 15.00L at 180 to target 145-149 temp for 60min
2.
Vorloaf first runnings until clear, recirculate
3.
Sparge with 7L at 175
4.
Vorloaf second runnings until clear, recirculate
5.
Sparge to final volume 20L, check gravity
6.
Add 5g of Hallertau
7.
boil 60min with no boil overs
8.
Add lemon juice at 60min
9.
Add 5g Hallertau at 30min
10.
Add irish moss wort chiller at 10min
11.
Add lemon zest at flame out
12.
Cool to 25C, whirpool for 15min
13.
strain into primary
14.
Add lactic acid to bring pH to 4-4.5
15.
Bubble CO2 through wort, pitch lactobacillus
16.
maintain 45C for 24 hours
17.
Check pH to reach desired (pH of 3.3)
18.
Boil to kill lacto, pitch 25g citra hops at flame out.
19.
Cool to 25C, strain into primary, pitch yeast and aerate
20.
pitch 25g citra for dry hop
21.
Rack beer to amaretto soaked cherries
