Special Instructions

1.
rehydrate yeast in sterile water(2/3 cups) bring yesterday slurry down to wort temp slowly with additions of chilled wort
2.
mash at 152-156 for 60 min
3.
Chill wort to 12 degrees Celsius and aerate well
4.
After Primary fermentationis complete(9 days approx) perform diacetyl rest at 18 to 20 degrees Celsius for 2 days
