Special Instructions
1.Add half lemon when heating the initial water for the mash. The ph needs to be around 5.5. You will need to adjust for your water source. This will will help ph be more acidic and aid in the sugar conversion.
2.Boil the wort for 90 minutes. At the 60 minute mark, add your hops.
3.1/2 cup of honey was added late in the boil @ 80 min
4.Ferment the beer at 60?F. Once the fermentation is complete, find a cold place to store the beer for a few weeks. A lagering period will help the beer if you can do it, but don’t sweat it if you can’t.
5.At bottling, add 1 cup of light DME that is boiled in 2 cups of water for 10 minutes. If you are kegging, carbonate the beer to 2.5 volumes.
Not bad for my first beer. I originally meant to make a Kolsch, but got crazy with the hops. Very drinkable. I did not use any finings so it looks like an unfiltered beer. HAs a good IPA flavor with a slight honey aftertaste in the back of the tongue.
