Special Instructions
1.Heat 16 qt sparge water to 171F, add to tun with grain, stir to equilibrate temp., leave lid off till temp is 154F, then cover for 60 minute saccharification rest
2.Collect and measure first wort while heating 4.75 gallons (19 qt) sparge water to 179F
3.Batch or fly sparge till a total of 6.75 gallons of wort are collected.
4.Boil 60 minutes, adding hops as indicated
5.Add chiller, Whirl-floc, lactose with 15 minutes left in boil
6.Chill, filter, add yeast
7.Ferment at 70F, 1 week primary, 2 weeks secondary (add chocolate extract last week)
8.Prime with 4 oz corn sugar, bottle, carbonate at 70F for 2 weeks
