Take 2 of the Japanese Ginger IPA. Nothing wrong with the first version. Just want to dial down the alcohol a bit, dial up the ginger just a fraction, and the same for the hop.

This recipe was cloned from Experimental Japanese Ginger IPA.

Mash Steps

No mash steps in this recipe

Special Instructions

1.
Steep Crystal Malt for 30 mins @ 160F (cooling to no less than 150F)
2.
Add ginger (very finely sliced) to boil at 60 mins.
3.
Add yeast nutrient, gypsum and whirlfloc at 15 mins.
4.
At 10 mins, dissolve cane sugar in some boil water, then add to boil.
5.
Let wort rest for 20 mins at flameout before chilling to 70F (or as close as we can get).
6.
Transfer to fermenter and aerate for 5 mins.
7.
Chill wort to 70F (if not there) in fermentation chamber before adding yeast.

Notes:

Too dry, and the hops are masking the ginger somewhat. Need to dial back the IBUs, and get some sweetness in, using either Carapils and/or a Dark Munich Malt. Should also consider a less attenuating yeast.

Notes:

Tasted prior to kegging (from fermenter). Pretty clear. Lighter color than last time. More a golden straw color (good). Nice ginger bite. Clean bitterness from the hop. Got a slight sweetness up front too. Cannot wait to get this in the keg and carbonated.
