Notes:

Big turnover from settling in a few more days @ serving pressure. Shot out the first few ounces then poured a relatively clear taster. Big hop aroma Simcoe on the nose. The Mosaic appears to be showing through quite well in the flavor. Definitely my favorite beer to date. Bottling Thursday night and expect to have even better melding of the flavors. Also the best young beer I have tasted; all others have peaked after about two months from brew date. We are still only at 24 Days

Notes:

After 3 days in the keg. Taste was very sweet / fruity, I am assuming I just got the first bit of the settled hops that cold crashed to the bottom. Seemed to remind me of tasting the runoff from the hop bag. Carbonation seemed pretty good after 3 days @ 30+ PSI, dropped down to 10 PSI to settle out and infuse. Hope to bottle on Thursday or Friday.
